Creamy Potato Soup
Creamy Potato soup
Very Easy, Time-Tested, Classic Potato Soup.
- Working time about 10 minutes
- Total time about 35 minutes
- Ingredients for 4 people
- 2 oz butter
- 15oz potatoes
- 4oz onions
- 4 cups of home-made chicken stock or vegetable stock
- 4fl oz creamy milk
- Salt and freshly ground black pepper
- Freshly chopped herbs to garnish (optional)
Preparation
Heat the pan and melt the butter. Dice the onions and potato and add them in the butter until well coated.
Season with salt and a bit of pepper. Cover and simmer on medium heat for about 10 minutes.
Bring the stock to the boil. Simmer for 10-15 minutes or until the vegetables are tender.
Add the daily milk and purée the soup with a blender.
You can garnish with herbs or some of the following garnishes.

Spicy Sweet Potato Soup
Spicy Sweet Potato soup
Spicy and sweet at the same time. Very easy to make.
- Working time about 10 minutes
- Total time about 55 minutes
- Ingredients for 6 people
- 1 ½ pounds orange-fleshed sweet potatoes
- 1 tbsp vegetable oil
- 1 onion
- 2 inch ginger root, finely sliced
- 1 tbsp red curry paste
- 35 fl oz of coconut milk
- 3 cups vegetable broth
- 3 ½ tbsp lemon juice
- 1 tablespoon toasted sesame oil
- ½ cup chopped fresh cilantro
- Salt and pepper to taste
Preparation
Preheat the oven to 400 F. Halve the sweet potatoesand bake until it’s tender enough to easily pierce with a fork ( it takes about 45 minutes). Remove from the oven and allow to cool.
Heat the oil in pot over medium heat. Chop and then add the onion and ginger; cook until softened, for about 5 minutes. Stir in the curry paste and heat for 1 minute, then add the coconut milk and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 5 minutes.
Peel the sweet potatoes and slice. Add to the soup and cook for another 5 minutes. Season with salt and pepper, add lemon juice. You can garnish with a drizzle of sesame oil, a little bit of cilantro and coconut milk.

Turkey – Mashed – Potato Soup
Turkey – Mashed – Potato soup
Very simple pumpkin cream soup (without oranges etc., nothing fancy)
- Working time about 30 minutes
- Total time about 30 minutes
Ingredients for 4 people
- 3 cups of mashed potatoes
- 2 cups mushrooms
- 2 cups cooked turkey, chopped
- 35 fl. oz chicken broth
- 2 tbsp butter
- 1 medium yellow onion (finely diced)
- 1 carrot
- 1 tsp thyme
- Salt and pepper to taste
Preparation
Heat the pan on medium, melt the butter. Dice the onion, mushrooms, carrot, and thyme, stir in the pan and saute until the onion is softened, about 4-5 minutes.
Add the broth and mashed potatoes. Stir until potatoes are near to be cooked and broth gets smoothie.
Bring to boil, Add the turkey and let it simmer for about 10 minutes. Season to taste with salt and pepper.

French Potato-Carrot Soup
French Potato-Carrot soup
Very simple pumpkin cream soup (without oranges etc., nothing fancy)
- Working time about 10 minutes
- Total time about 40 minutes
Ingredients for 4 people
- 10 oz potatos
- 2 carrots
- 1 1/2 leek
- 1 1/5 tbsp butter
- 4 cups of water or chicken broth
- 1/2 tsp sugar
- Salt and pepper to taste
- 4 fl oz cream
- Parsley or chervil for garnish
Preparation
Melt the butter in a pot. Add the carrots and leeks to the pot and saute until tender.Peel, chop and add the potato and stir thoroughly. Add water or broth, sugar, salt, pepper and simmer for 20-30 minutes or until potatoes are cooked enough, you can check it with a fork.Mash and stir in the cream. Sprinkle with parsley or chervil and serve. If you want less calories or a thicker soup, you can simply omit the cream.

Thai Shrimp and Potato soup
Very Exotic, Thai Potato soup with Shrimps
- Working time about 20 minutes
- Total time about 45 minutes
Ingredients for 4 people
- 1 small onion
- 1 piece of ginger root
- A bit of oil for frying
- 1 large potato
- 1 tsp curry powder
- ½ tsp. turmeric
- 800 ml vegetable broth, approx.
- Coconut milk
- Salt and pepper to taste
- Juice of lime (1 piece)
- 4 shrimps
- some coriander green, chopped
Preparation
Sauté the finely chopped onion and ginger in oil. Add the potato and fry. Then sprinkle with curry and turmeric and fill up with vegetable broth and coconut milk. Let it boil for about 20 minutes.Let it cool, puree everything in a food processor or with a blender. Return to the pot and season with salt, pepper and lime juice. Finally, add the shrimp for 1 minute, just for a little time or they will get tough.Serve sprinkled with finely chopped cilantro.

Very Cheesy, Very Tasty Potato soup
- Working time about 5 minutes
- Total time about 20 minutes
Ingredients for 4 people
- 10 oz mushrooms, ( champignons )
- 1 yellow onion
- 3 tbsp butter
- Salt and pepper to taste
- 3 tbsp flour
- 4 cups of vegetable broth
- 1 cup sweet cream
- 6 oz cream cheese
- 1 bunch of chives
- Nutmeg
Preparation
Fry diced onion in a hot pan, add sliced mushrooms and fry briefly. Season with salt and pepper. Remove half of the mushrooms. Dust the rest with flour and sauté.
Deglaze with broth and cream and bring to a boil while stirring. Then puree soup with blender. Add cheese and let it melt. Season to taste with salt, pepper and nutmeg.
Add mushrooms, which we’ve kept before. Cut chives into small rollsand garnish your soup with them.
